Inspector's notes

Observed multiple Time/Temperature Control for Safety (TCS) food items located in a reach-in refrigerator registering internal temperatures of 51°F. TCS food items include: various deli meats, hot dogs, sausages, bacon, eggs, cheese and lunchables. Upon further investigation, observed the reach-in unit registering an ambient air temperature of 51°F as well. Per manager the food items were placed into the reach-in refrigerator between 1-2 days prior to the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The manager voluntarily discarded the food items at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple gallons of whole milk being cold held in a reach-in refrigerator near the back of the store registering an internal temperature of 60°F. Per manager, the milk has been in the refrigerator since yesterday when they received a shipment. The reach-in refrigeration unit measured 56°F with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The establishment shall not use the refrigerator for cold holding perishable food items until it is repaired. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
