Observed several TCS items datemarked from 3/25 to 4/4 as the dates of the items were made/opened. The items are corned beef, canned artichoke, roasted pepper gouda, gumbo, chicken poblano soup, hot pickled shallots and roast beef. Embargoed the items and the Person in Charge (PIC) discarded at the time of inspection. Discussed with PIC RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Per Person in Charge (PIC) the deli ham and turkey were portioned an hour prior to inspection. Discussed that they Temperature Control for Safety (TCS) items must be cooled in the reach-in and then can be placed into the prep table after the temperature of 41*F is reached. Cooling cannot take place in a prep table, but only in a reach-in/walk-in. PIC relocated the deli turkey and deli ham to the freezer to rapidly cool. Correct By: Corrected At Time Of Inspection
