Observed various temperature control for safety items such as meats, raw shelled eggs, and dairy products in the cooler, all which were prepared more than 24 hours prior to inspection, measuring between 45-52 degrees F. These items were discarded- see embargo list for details. Ambient temperature of unit measured 45*F at time of inspection. Discussed cold holding requirements, instructed PIC to discontinue use of unit until in good repair. Alternative refrigeration is available to operate safely. Corrective Action: Corrected at time of inspection.

Per Person in Charge (PIC) the deli ham and turkey were portioned an hour prior to inspection. Discussed that they Temperature Control for Safety (TCS) items must be cooled in the reach-in and then can be placed into the prep table after the temperature of 41*F is reached. Cooling cannot take place in a prep table, but only in a reach-in/walk-in. PIC relocated the deli turkey and deli ham to the freezer to rapidly cool. Correct By: Corrected At Time Of Inspection
