Inspector's notes
Observed empolyee enter the kitchen from outside and start to cook without washing hands. When person in charge (PIC) asked employee to wash hands, the employee washed hands for less than 10 seconds. Also discussed with PIC Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed dish washer in bar actively being used and measured at 0ppm of chlorine sanitizer. Discussed with PIC the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC primed machine 3 times and was still at 0ppm. PIC called maintenance to fix machine, and all dishes were taken to back facility dish machine to get properly cleaned. Observed TCS items such as tomatillo sauce, jalapeno honey (cream base), cream cheese sauce and chopped lettuce salad with dates the items were made were on March 22nd to 28th and each was dated to discard after 8 days. Embargoed the TCS items and Person in Charge (PIC) discarded at time of inspection. Discussed with PIC RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Also observed red and green salsas were date marked for a total of 8 days but not past the actual 7-day discard day. PIC ensured all RTE/TCS foods were properly date marked at the time of inspection.
