Due to the violations noted on this inspection report, County legal action may result from this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Establishment has replaced a low temperature chemical dishwasher with a high temperature dishwasher but only has a 40 gallon conventional electric water heater. Establishment added a combi-oven without required backflow observed approximately 3 years ago. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
Inspector's notes
Observed a maximum sanitizing temperature of 152*F after running the dishwasher was run 5 times. PIC stated only the booster is used to heat the high temp dishwasher. A 40 gallon conventional electric water heater is available in the building containing the kitchen. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Food-contact surfaces were properly sanitized at time of inspection.
