Inspector's notes

Observed shredded cheese mix, pico de gallo, cut lettuce, cooked shrimp, cooked chicken and cooked carne asada (45-48'F) in tabletop prep cooler located opposite of stovetop. Ambient temperature of unit recorded 45.8'F. PIC stated all food items were stocked less than 4 hours prior during shift change. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment observed with adequate coldholding capacities. PIC put a work order in for unit in question, expected to be serviced prior to noon. PIC agreed to not use unit in question until it has been fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed deep pan of menudo (128'F) cooling at ambient air temperature on stove without flame on. PIC stated food item was made less than 30 minutes prior. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
