Observed raw marinated chicken in reach on cooler at 46*F, and cooked and cooled beef in same cooler at 44*F. As per the owner the beef had been taken out prior to the inspection starting for prep. Once placed in cooler , product cooled to 43*F rapidly. Raw marinated chicken had been prepared on 5/24. Person in charge did not take out in morning for any prep. Chicken was embargoed and discarded. Advised staff to use metal stem thermometer to verify foods have cooled to 41*F prior to covering and dating. Corrective Action: Corrected at time of inspection.

Advised to wipe down with soap and water and thoroughly clean (wash rinse sanitize) every 4 hours when in use. Corrective Action: Correct prior to next routine inspection.
