-- Observed employee spray off and soak dirty dishes/utensils with hands, then start putting away clean dishes without washing their hands between tasks. The inspector educated to the employee the importance of proper handwashing after changing tasks multiple times, and they continued to handle both dirty dishes and clean dishes without handwashing between change of tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. The person in charge had a conversation with the employee regarding hand washing requirements at the time of inspection. Corrective Action: Corrected at time of inspection.

Facilities must be maintained in a condition that promotes handwashing. Requested the PIC replace batteries so that paper towels can dispense for hand washing at the time of inspection. Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---- Sliced ham, sliced turkey, sliced American cheese, and smoked ham observed with an ambient temperature range of 53-57*F while being cold held inside the refrigerated drawer below the flat-top grill. Thermometers were calibrated at time of inspection. The ambient temperature of the cooler was 51*F according to inspectors min/max. PIC advised staff to use other cold holding units. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Cold holding temperatures for TCS foods must be at 41*F or below, eggs must be stored at 45*F or below. It was unclear as to how long the food was within the temperature danger zone, therefore it was discarded. Person in charge was aware that the unit was not working properly and stated that there is a work order to get unit fixed.
