The low temp dish machine in the service kitchen had 0 ppm chlorine. After changing the chlorine bottle the concentration was measured at 100ppm. Person in charge will train employee how to check the sanitizer with the test strips properly. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the low temp mechanical dish machine with a concentration of 0 ppm chlorine on recently washed dishes in the dish machine. The dish machine was ran through additional cycles and the chlorine concentration remained at 0 ppm, verified with inspector and person in charge's (PIC) test strips. The chlorine sanitizer bucket observed to be completely empty. The chemical was refilled, primed, and ran through several cycles to achieve a chlorine concentration of 50-100 ppm. PIC will train employees to test the chlorine prior to washing dishes and keep a record on a log. Corrective Action: Corrected at time of inspection.
