Observed cream butter sauce, cooked beef and cooked pasta Ready to Eat Time/Temperature Control (TCS) foods (see embargo) exceeding 7 days at 41*F in the walk in refrigerators. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed employee handle raw frozen chicken with gloved hands, then removing gloves without washing hands prior to resuming ready-to-eat (RTE) food prep. Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. 2nd consecutive violation. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the following items between 48 - 60 Deg. F. in pans on ice at the grilling service line: cheese, lettuce, sliced tomatoes, and chicken. Also, observed salad and coleslaw at 54 - 56 Deg. F. at the salad service line. Observed lettuce and tuna salad at 53 deg. F. on ice in the top portion of a down prep refrigerator on the far side of the service line. All oft these items were all placed out with-in the previous 45 minutes per the operator. The operator began switching out the products and placing more ice around them at the time of inspection. Spoke to operator regarding implementing the available time as a control procedure for these products. Corrective Action: Corrected at time of inspection.
