Two containers of tightly covered mashed potatoes-71-75F cooling in the reach in cooler. PIC stated that the potatoes were made and began cooling about 4 hours prior and discarded-see embargo form. Ensure that PHF/TCS foods are cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. Corrective Action: Corrected at time of inspection.

In use chlorine sanitizer in three compartment sink above 200 ppm. PIC remade the sanitizing solution to proper concentration of 50ppm. Ensure that chlorine sanitizer is at proper concentration of 50-100ppm when used on food contact surfaces and/or according to manufacturer’s directions.
