#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed open face display cooler in produce section measuring 48*F ambient temperature. Internal temperature of TCS foods prepared by produce staff measured 44*F at 11:30 AM (cut melons: watermelon, honeydew, cantaloupe). All packages were labeled with time and date of preparation, between 03/24/2025 and the morning of 03/25/2025. All TCS foods improperly cold held that were prepared within <4 hours were relocated to produce walk-in cooler to rapidly cool to 41*F at time of inspection. All TCS foods improperly cold held that were prepared >4 hours prior were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
