Observed wood in the walk-in cooler holding up shelving unit with build up of organic matter at the time of inspection. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Suggested establishment uses materials that are easily cleanable such as plastic. Corrective Action: Correct prior to next routine inspection.
