PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. Observed that the sanitizer at the 3 compartment sink tested at 0ppm for QAT sanitizer. Observed that the sanitizer bottle was nearly empty so no sanitizer was being pulled into the dispenser. QAT sanitizer must test between 200ppm and 400ppm to properly sanitize wares and wiping cloths. The PIC replaced the bottle of sanitizer at the time of this inspection, after which it did test at the correct concentration. Also observer that the sanitizer is being mixed/dispensed with hot water. Sanitizer dispensers should be connected to the cold as hot water will degrade the sanitizer very quickly. Please have this corrected. Correct By: Corrected At Time Of Inspection
