Inspector's notes
Cooked pasta noodles of different types in pasta drawer cooler found with internal temperatures of 46-54*F; temperatures verified with PIC's and inspector's probe thermometers. PIC discarded the noodles. The noodle cooler was unplugged and will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate noodle coolers and cold holding units are available to continue normal operations. Mashed potato and cooked sauces in ice bath with internal temperatures of 41-58*F in ice bath above grills on cook-line. The ice bath had lost too much ice and water and was only contacting the bottom portion of the pans which kept the very bottom at 41*F or below but the rest of the product about half an inch and above the bottom was above 41*F. PIC discarded the sauces and mashed potato. PIC remade the ice bath so a proper level and will restock the ice bath. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

The ambient temperature of the cooler was also 48-50*F. PIC stated the cooler was last checked around 10:00 AM today and it was holding below 41*F. PIC moved the TCS food items from the cooler to the walk-in for cooling and continued cold holding. The sliding door cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient of 41*F or below.
