Inspector's notes

-- Observed container of queso blanco in kettle warmer with internal temperatures ranging between 124°F-128°F using probing thermometer. The kettle warmer was placed on a low temperature setting and the maximum water temperature measured at 129°F. The person in charge stated the queso was placed in the warmer approximately 3 hours prior to the inspection (around 10:00 AM). All TCS foods improperly hot held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Reviewed MCESD requirements with the person in charge: Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. The PIC provided paper towels for the dispenser at time of inspection. Corrective Action: Corrected at time of inspection.

Install soap and paper towels at the new backroom hand wash sink.New hand wash sink drain has been run over the floor to the floor sink while that was not needed.Please re-run along the wall off the floor to accommodate for floor cleaning. Patch holes in the floor.Drain lines may not run unnecessarily exposed, shall be rigid, properly braced, where needed run along the wall, maintaining gravity flow and a 1-inch air gap at the floor sink. Drain lines shall be installed so that they accommodate cleaning and the provision of storage space as much as possible. Drain lines may not be run over the floor. Wall penetrations are required to be finished out smooth and easily cleanable. Install escutcheon plates where applicable. Overhead drain lines may not be run over food service areas or lines must be troughed.
