The establishment ceased operations and hired a professional cleaning service to deep clean the entire restaurant and kitchen. While cleaning over a 3-day period, all food contact surfaces and equipment were covered with plastic to prevent any contamination. Establishment is okay to re-open.-Discussed replacing light fixture covers along prep-line with manager.

Establishment was observed during last Routine Inspection operating as a Class 4 E&D, conducting advanced preparation processes (cooking, cooling, and storing) for 4 time-and-temperature control for safety (TCS) items - grilled chicken breast, machaca beef with potato, pork chorizo, and omelet-style egg patties. Establishment is currently permitted a Class 3 E&D, which only allows for advanced preparation processes for 2 items. Reviewed permitting requirements and inspection frequency policy with GM. GM expressed interest in upgrading permit to accommodate these changes in the menu. Permit will be upgraded to Class 4 E&D.No County legal action will result from this advisory.
