Operator proceeded to discard 5ct of blue cheese at time of inspection. Internal temperature of 56*F for cheese in single door-refrigeration unit at cook line. Per operator cheese had been replenished in unit less than 4 hours prior. Instructed operator to relocate cheese and discard past the 4hours at time of inspection.
