Observed food storage containers that were stacked while still wet. Discussed air drying requirements with person in charge (PIC) and PIC asked an employee to separate the containers to allow for proper air drying at time of inspection. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed dishes being sanitized in a solution containing 0ppm quat sanitizer when measured with a chemical test strip. Observed 0ppm quat from the dispenser with the chemical supply bucket half full. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC manually added quat sanitizer until the solution measured 200ppm with a chemical test strip. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
