Observed the food containers on the bottom shelf of the clean rack that were stacked before air drying. Discussed with person in charge (PIC) that all food contact surfaces need to air dry to reduce contamination risk. Containers were seperated at time of inspection. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. ------ In the 3-compartment sink, observed dishes being washed, rinsed and sanitized in a solution containing less than 100 ppm quat sanitizer when measured with a chemical test strip. Discussed that quat sanitizer concentration should be maintained between 150-400 ppm (per manufacturer’s instructions) and verified with a chemical test strip. Observed the solution with a murky color and a large amount of food debris. PIC stated they had the chemical supply had serviced the unit and found the concentration dispensed to be sufficient. Discussed the volume of dishes being processed may be using up free sanitizer too quickly. Reviewed three compartment setup and sanitizer testing with PIC. The PIC emptied the solution and refilled the compartment with a solution measuring 150 ppm. Advised PIC to have the sink adjusted to around 200ppm to ensure a small buffer is available and all dishes are properly sanitized. Had manager move the dirty items to the 3-compartment sink to be thoroughly washed, rinsed and sanitized. Discussed that all utensils and dishes should be stored cleaned to the sight and touch to help prevent foodborne illness. Correct By: Corrected At Time Of Inspection
