The cold-holding unit needs to be able to maintain a temperature of 41*F or lower. Person in charge (PIC) will have the unit looked at. PIC mentioned it may need to be replaced. Please repair or replace the unit by re-inspection scheduled for 06/08/2026.

Observed the tall fridge holding at 51*F with min/max thermometer. The internal thermometer for the unit stated 50*F. The milk is still holding to temperature. The unit may be high due to high use. Person in charge (PIC) is monitoring the milk and the unit. PIC will create a work order to have the unit looked at by re-inspection. Also observed the walk-in with water and around the walk-in cooler. PIC will have it looked at as well. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 05/29/2026. At re-inspection inspector's min/max measured 52*F. 2nd re-inspection scheduled for 06/08/2026.
