In 2-door cooler next to soda fountain in kitchen two large pots of menudo measured an internal temperature of 56'F. Per cook menudo had been made the previous day. As it had not cooled within proper time frame menudo was embargoed. Reviewed cooling process with cook and discussed more efficient alternate cooling methods. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
