Observed cooked rice in a big bin with an internal temperature of 80F at 12pm inspection time. Person in charge states item was cooked between 7-8AM. All TCS foods improperly cooled were reheated to 165°F to restart cooling process using approved cooling procedures. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed employee on the main cook line crack two raw shelled eggs into a pan using gloved hands. Employee then proceeded to touch handles of other equipment and utensils on the cook line with the same gloves. Also observed employee blow into glove prior to placing gloves on moments later. Employee was informed to remove gloves and wash hands prior to placing new gloves on. Discussed proper hand washing with person in charge and employees. Corrected at time of inspection.

All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
