Observed hash browns in hot holding unit to be 125°F. Employee stated that they were put out 1 hour ago. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above while hot held. PIC voluntarily discarded the hashbrowns. The hash browns were within proper time frames to be re-heated and hot held. Discussed hot holding and re-heating temperatures. Corrective Action: Corrected at time of inspection.
