Internal temperature of yoghurt inside small drink cooler was 50 degrees. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Conducted walk through per request of GM, Alvin Hartford. GM was not available at the initial inspection. Walk through the kitchen and laundry areas with GM and maintenance staff, Christian. The establishment is open and operating. Reviewed plumbing fixtures required for the kitchen: a food prep sink (to wash fruits, thawing frozen products) sink must have hot and cold water and indirect drain to the floor sink. Relocate the coffee/ tea brewer to the work surface next to the oven. Noted electric griddle and cook top inside the kitchen. Manager informed these items were for cooking liquid eggs and reheating foods. Please discontinue using these cooking equipment as they are required to be under a type 1 hood. Use the approved oven for the cooking/ reheating of foods. Re-install the food prep sink in its original location. A deep bowl single compartment sink with hot and cold water is required for thawing, rinsing of foods/ fruits/ can goods, etc. Provide hot water for the mop sink. Provide a hose bib vacuum breaker at the end of the mop sink faucet before attaching the open-end hose downstream of the mop sink's faucet.
