Observed a new walk-in freezer in back storage area with an improperly plumbed drain line. Per PIC the walk-in was installed in November. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.

Inspector's notes
Observed a cold holding case with cuts of meat, soft cheeses, and sea food held inside. Internal temperature of TCS food taken with internal probe thermometer registered internal temperatures from 45-50*F. When asked, PIC explained the majority of the cuts of meat were cut and prepared under 4hrs prior to inspection. The shrimp were thawed during morning prep and registered an internal temperature of 55*F. PIC stated they thawed the shrimp under warm running water before being placed in the case for sale. Shrimp were relocated to walk-in refrigeration unit for rapid cooling. Soft cheeses were placed in unit when facility opened, registered an internal temperature of 48*F. Soft cheeses were relocated to walk-in refrigeration unit to facilitate rapid cooling. Per PIC the only meat kept in unit >4hrs was Cecina cut steak, internal temperature registered 55*F, discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Internal ambient air temp of unit registered with min/max ambient air thermometer measured at 45*F. PIC adjusted thermostat to cool unit, registered at 38*F with min/max thermometer.
