The dumpster has a crack on the bottom front side. The recent rainwater had leaked out and pooled near the dumpster, attracting many flies. The dumpster does have its drainplug in place. Observed heavy black matter built up on the hood baffles. Establishment to clean baffles frequently enough to prevent build-up. Also observed heavy dust and grey matter build up on the salamander. Establishment had not used the salamander for a long time due to a broken component. Establishment to store the salamander as clean until it is able to be fixed. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Observed raw shelled eggs stored directly above multiple RTE food items in reach-in unit located opposite of hot-holding unit. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination.
