Inspector's notes

Observed TCS food items in fridge on North wall out of temp, including sour cream (48-50*F), cut tomatoes (51*F), lettuce cut off the head (53*F). Person in charge stated these items had been in the since the day prior or longer. All TCS foods improperly cold held for more than 4 hours were discarded by PIC at time of inspection. Observed feta cheese temp at 48*F, person in charge stated cheese had been put in the unit 2 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed refrigeration unit along North wall to have an ambient temp of 50.9*F. All equipment must be maintained in good repair at all times. Person in charge will store TCS/RTE foods in alternative refrigeration units until working properly. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
