Observed food employee wash hands in establishment 3-compartment sink, don gloves, and walk back to cookline to prepare customer food order. Hands shall be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Observed two containers of pozole (10lbs~) being stored in the walk in refrigeration unit with a date mark indicated they were prepared 02/19/2024. Informed employee that all RTE food or food combined with RTE ingredients being stored (except time frozen) must be discarded after seven days. Employee voluntarily discarded the containers of pozole during the time of inspection. A food shall be discarded if it exceeds the 7 days at 41?F, except time it is frozen.
