#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observed chunks of roast beef inside the walk-in cooler with internal temperature of 48-50*F. The roast beef was in a 200 QT pan, sealed with saran wrap and tin foil. Per PIC, the roast beef was cooked the day before and placed in walk-in cooler to cool. Discussed proper cooling parameters. TCS foods must be cooled from 135*F to 70*F in 2 hours, then further cooled to 41*F in 4 hours. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Discussed the importance of air circulation during the cooling process. Suggested venting the pan and cutting the roast beef in quarters to facilitate rapid cooling. Corrective Action: Corrected at time of inspection.
