Inspector's notes

Observed calabacitas, green sauce, red sauce, cooked black beans, and flan in main walk in cooler exceeding the 7 days date mark sticker. Observed cooked and raw meats with no date marking stickers in the main walk in cooler. Per person in charge (PIC) the meats were prepped the day before. All RTE/TCS foods past 7 days of preparation were voluntarily discarded by PIC at the time of inspection. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
