Observed brown residue on the deflector plate of the ice machine. Equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Discussed ice machine cleaning frequently. Please clean the ice machine as frequently as necessary to prevent the buildup of residue and clean prior to the next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed two cans of yellow peppers on the dry storage shelf with severe dents nears the side seams. Please ensure canned food, and other packaged food items are maintained in good condition (no dents along seams or seals). Swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. Discussed monitoring product when received from supplier for damage prior to storage. Corrective Action: Corrected at time of inspection.

Observed a small plastic container of crème fraiche in the reach in cooler dated 9/27. In the walk-in cooler observed cooked lemon curd containing eggs date marked 9/28. Observed chocolate buttercream frosting dated 6/8, almond buttercream frosting dated 5/28, and pastry cream dated 9/17, and bread pudding dated 9/28 made from scratch in the walk-in cooler.
