Person in charge (PIC) stated that deli meats were put in unit less than 4 hours prior, and were moved to cooler in back of store. PIC stated crema has been in unit since previous night and was voluntarily discarded. Discussed with PIC that food items in unit must be held at 41*F and below at all times. Corrective Action: Corrected at time of inspection.

Person in charge (PIC) stated that the products have been in cold holding unit since the morning about 3 hours prior. Employees moved food items to walk-in in back of store and to other cold holding unit inside cremeria/ deli to bring food to proper cold holding temperatures. Observed the middle double-sided cold holding unit of cremeria/ deli holding at an ambient temperature of 47.6*F. Discussed with PIC that cold holding units must have an internal temperature of 41*F and below when being used to TCS foods. Person in charge was able to place in a work order at time of inspection. Both cold holding units will not be used until they both read at ambient temperatures of 41*F or below. Please have repaired prior to re-inspection. Re-inspection will occur on November 3. Correct By: Correct Prior To Reinspection
