Observed two deep containers (greater than 4 inches deep) containing cooked salsa at the starting stages of the cooling process inside of the walk-in freezer. Discussed with person in charge (PIC) that cooling should occur in shallow and uncovered containers to ensure maximum cold air flow. PIC moved salsa to a shallow metal container to continue cooling.
