Observed "El Tradicional" frozen rompope labels missing net weight and manufacture information, with many packages missing labels. Observed "El Tradicional" flan in 16oz clear containers with lids to have straw hole, most containers missing label. All packaged food labels must include the following items: (1) the common name of the food, or absent a common name, an adequately descriptive identity statement; (2) If made from two or more ingredients, a list of ingredients and sub-ingredients in descending order of predominance by weight, including a declaration of artificial colors, artificial flavors and chemical preservatives, if contained in the food; (3) an accurate declaration of the net quantity of contents; (4) the name and place of business of the manufacturer, packer, or distributor; (5) the name of the food source for each major food allergen contained in the food unless the food source is already part of the common or usual name of the respective ingredient; (6) except as exempted in the Federal Food, Drug, and Cosmetic Act § 403(q)(3) -(5), nutrition labeling as specified in 21 CFR 101 -Food Labeling and 9 CFR 317 Subpart B Nutrition Labeling; and (7) label in English. Inspector's notes

Observed many TCS food products in two door refrigerator to be above 41*F. Person in charge was unable to say when products went out of temp with the unit working properly the previous day. Food items include El Latino plain yogurt (52*F), El Latino mango yogurt (56*F), El Latino strawberry yogurt (52*F), crema (52*F), pork sausage (55*F), queso llanero (53*F), queso llanero shredded (55*F), Salchinchon cured sausage (55*F), queso defreir (50-52*F), cheddar cheese (56*F), nata criolla cream (56*F), and butter milk (53*F). All TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed "Fresh food" 2-door cold holding unit with ambient air measuring at 55*F with mix/max thermometer. Temperatures of food items inside measured 52 to 57*F with infrared thermometer. Person in charge stated they did not know how long cold holding unit was at 55*F. Foods in unit included hard cheeses, different brands of pork salami, and pork and chicken salami, Venezuelan cheese cakes, Latin American cream, green sauce, garlic sauce, raw pollock, and cheddar cheese, which all had "keep refrigerated" on labels. Food was embargoed. PIC stated they will try to have unit fixed and will remove food from establishment at reinspection. Correct By: Correct Prior To Reinspection
