Observed ham, turkey ham, red salsas in single-serve containers, and spinach in top section of cold-holding prep table measuring at internal temperatures of 52*F to 57*F. All items were above the fill line of prep table. Person in charge (PIC) stated that items have been there for about 3 hours, and were moved to the bottom part of prep table to cool down. Discussed with PIC that food items must not go above the fill line, and keeping items at or below the fill line ensures they maintain a safe cold-holding temperature of 41*F and below. Corrective Action: Corrected at time of inspection.
