#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed half and half and coffee creamer with internal temperatures at 56*F when measured with a probe thermometer. PIC stated the foods had been in the dispenser all day. Ambient air temp observed at 47*F when a min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC placed an out of order sign on the machine and stated it would not be used until repaired/replaced. Corrective Action: Corrected at time of inspection.

No County legal action will result from this inspection.F'REAL blender was in use at the time of inspection and logs observed in compliance but PIC was unaware of cleaning procedure or frequency. Discussed variance requirements with PIC:-Use of the alternate cleaning and sanitization schedule is limited to the FRLB4 blender. -The F¶REAL blender shall undergo a two part cleaning cycle:a. Once every 24 hours, the blender shall undergo cleaning and sanitization by activating the internal automated high temperature cleaning and sanitization cycle. b. Once every 7 days, a manual cleaning and sanitization using the submitted and approved cleaning process shall be conducted. -Logs shall be maintained that verify the two part cleaning cycle has been completed in accordance with the approved cleaning frequency. -During the weekly manual cleaning process, verification of the calibration of the high temperature sanitization shall be conducted by use of heat sensitive indicators, which shall be maintained with the weekly logs. -These logs shall be retained on premises for at least 180 days. -During the weekly manual cleaning process, the interior of the blender shall be inspected for hard water deposit buildup. If necessary, the blender shall undergo descaling to remove any observed buildup. -At all times the interior, food contact surfaces shall be maintained clean to sight and touch.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence ------ Observed an accumulation of 30+ live drain flies the soda machines and soda bibs. PIC stated a work order had been placed on a leaking soda line which attracted the flies. Discussed proper drain maintenance to eliminate pest harborage conditions. Must obtain licensed pest control prior to re-inspection on 12/15/2022 to eliminate drain fly issue. Correct By: Correct Prior To Reinspection
