If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Inspector's notes

On the bottom shelf of the cabinet warmer oven on the line (set to 145°F) observed mushroom jus/88°F and ribeye demi-glaze/90°F. On the counter, shelf, and expo station by the grill observed assorted sauces including beurre blanc/131°F, mushroom cream sauce/109°F, miso emulsion, 111°F, and queso/80°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined all sauces were prepared within the last 2 hours.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed center cold table on the cook line that had an ambient temperature of 50*F measured with inspector thermometer. Chef had staff removed all items from the bottom portion of the unit and store in walk-in cooler at time of inspection. Items on top included cooked broccolini, gnocchi, grilled onions, horseradish aioli, and spinach leaves. Items on top measured with inspector thermometer measured 42*F - 44*F. Chef stated that the products had just been stocked 30 minutes prior. Chef had staff set up ice bath for all items on top for dinner service at time of inspection. Chef placed a work order at time of inspection. Discussed with Chef that all TCS items should be maintained at 41*F or below when cold holding. Correct By: Corrected At Time Of Inspection
