Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The garlic and oil was out since 11AM and was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Instructed PIC to utilize 4 hour time as a public health control for Pizzas and other TCS foods held at room temperature, discussed creating a written policy for time as a control. Corrective Action: Corrected at time of inspection.
