Inspector's notes

Observed chili reheating in the steam well, with an internal temperature of 99-124F, probe thermometer, verified by PIC. According to employee, the chili started the reheating process more than 2 hours prior to inspection and is a commercially processed, precooked item. PIC discarded the chili, see embargo form. PIC reviewed the reheating procedure with employees and will make changes as necessary to ensure that all commercially processed TCS food items must be rapidly reheated to 135°F within 2 hours prior to hot holding. Corrective Action: Corrected at time of inspection.
