Observed multiple areas of the kitchen with an accumulation of dirt, dust, and other food debris. Notable areas include the portable fans used throughout the kitchen, metal storage racks containing dishes, and the wall behind the 3-compartment sink. The establishment shall clean the physical facility at a frequency to prevent the accumulation of dirt/dust/debris and to prevent potential contamination of food. Corrective Action: Correct prior to next routine inspection.

Cut lettuce, cottage cheese, pepperoni and shredded cheese with internal temperatures between 50 degrees F and 53 degrees F cold holding in the salad bar near the cash registers. Ambient temperature of the unit was found to be 50 degrees F using a min/max thermometer. PIC will call technician to repair the unit. Establishment has enough cooler capacities to operate safely until salad bar is repaired. Corrective Action: Correct prior to next routine inspection.

Ambient temperature of the unit was found to be 50 degrees F using a min/max thermometer. PIC will call technician to repair the unit. Salad bar was placed under time as a control procedures until it can be repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
