Inspector's notes

Observed sliced tomatoes, cooked ham, cooked turkey, cooked chicken, tuna salad, raw beef, provolone cheese, and swiss cheese in walk-in cooler between 44 and 46 °F, and provolone cheese in sandwich cooler next to grill at 49 °F. Air temperature in walk-in reached a minimum of 44 °F as measured with min/max thermometer. Walk-in air temperature was 38 °F 3.5 hours prior as per facility's temp logs. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to freezer or alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the following TCS foods found at above 41*F in single door prep refrigeration unit to left of grill: Tomatoes 44*-47*F, Deli Meats 51-53*F, Sliced lettuce 53*F, Tuna salad 53*F. Refrigeration unit was observed at 52-53*F. Establishment has additional adequate cold holding units in facility, PIC agrees not to use unit for TCS items until serviced. Per PIC food items list above had been placed in prep refrigeration unit less than 1hour prior to inspection. Instructed operator to remove all items from refrigeration.

Operator was instructed to remove chemicals and stored in designated area. Toxic substances shall be stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles.
