Inspector's notes
Observed two cold brew coffee dispensers with cold brew coffee in them. The internal temperature of the dispensed cold brew coffee as measured using a probe thermometer ranged from 49°F- 51°F between both units. According to the person in charge, the cold brew coffee units had been refilled overnight and were in the machine for over 4 hours at time of inspection. The cold brew coffee bag-in-boxes were embargoed at time of inspection (see embargo form). Discussed with person in charge to reach out to a technician to service the machines. Person in charge put in a work order to have the machines fixed and will not keep time and temperature controlled for safety foods in the units until it is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed no sanitizer testing strips for the F'real ice cream machine. Discussed with person in charge that thermal testing strips are required for proper sanitizer assessment of the F'real machine. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection. A re-inspection will occur within 10 days or no later than July 31st, 2025. Corrective Action: Correct prior to re-inspection.

Observed a box of raw shell eggs sitting above cases of canned soda and boxes of dairy creamer packets and bags inside of the walk-in cooler. Person in charge (PIC) removed the eggs from the shelf and placed them on the lowest level of the shelf below ready-to-eat (RTE) foods. Discussed with person in charge that all raw animal proteins must be stored according to final cooking temperature and that all raw animal proteins are always stored below RTE foods. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
