Inspector's notes

Observed a container of beans and cheese mix, a container of shredded cheese and a container of cooked shredded beef all with internal temperatures as measured using a probe thermometer ranging from 48°F to 68°F in a prep unit. According to the person in charge, the foods in question had been moved back and forth from the unit to make dishes and then placed back into the prep unit and had been in the unit for less than 4 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed with person in charge to either set up a small ice bath to keep those foods at 41°F or below on the counter for food prep and cooking, or to utilize time as control and minimize the amount of product that is being pulled out and placed on the table for prep and cooking. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
