Observed some organic matter on the inside of the ice machine. Discussed with person in charge to clean the ice machine and to clean the ice machine in general on a more frequent basis to minimize the accumulation of organic matter inside the ice machine. The person in charge will have the ice machine cleaned. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed a container of red salsa and a container of green avocado salsa at a cold holding salsa bar with internal temperatures as measured using a probe thermometer of 50°F and 64°F respectively. According to the person in charge, the salsas had been in the unit for less than 2 hours and were moved to a reach-in cooler to rapidly chill to 41°F. Discussed with person in charge to have a technician service the unit. In the meantime, discussed with person in charge to either set up an ice bath to keep the salsa's cold at the bar or to maintain them in refrigeration. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed a general accumulation of food scraps and other debris throughout the establishment. Also observed some grease and lint on the hood vents in the kitchen area, as well as grease on the walls and nearby floor. Discussed with person in charge to clean the establishment and to clean the kitchen hood and surrounding walls and floor. Also discussed cleaning floor drains. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services.
