Inspector's notes

Observed corn on the cob that was hot holding in a hot holding well according to the person in charge. It was observed that the corn cobs were only partially in the water such that about 1/3rd of the cob was sticking above the water line. The portion of corn that was in the hot water was holding at 151°F. The portion of corn that was above the water line in the hot holding well was holding at 119°F. According to the person in charge, the corn cob had been in the well for more than 2 hours and was discarded by the PIC at time of inspection (see embargo form). Discussed with person in charge to add more water so it completely covers the corn or to cut the cobs a bit shorter so that they are fully immersed in the hot water. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
