Sanitizer wiping cloths stored in Quat Ammonia sanitizer solution less than 150 PPM. The dispenser was providing sanitizer of 150 PPM or below. Sanitizer will need to be manually mixed to appropriate concentration until sanitizer dispenser is working properly. Sanitizer cloth buckets were dumped out and will not have sanitizer cloth stored in them until appropriate sanitizer solution is provided.

Caulking missing and hand wash station nearest make-table. Coved base tiles separate from the wall near main freezer door. Small crevice at junction of mop sink basin and wall. Upper edge of prep sink near dish machine is separating from the wall.

The dishwasher was primed several times, and the chlorine concentration eventually dispensed between the required range between 50ppm-100ppm. Discussed with PIC ensuring employees are utilizing test strips to verify dishes in dishwasher are getting sanitized properly.
