Reviewed best cooling practices with Person in Charge, Metal containers Vs Plastic containers for better conductivity and rapidly chilling of items.Observed drilled large holes along inside edges of both cookline hoods, at time of inspection hoods were dripping fluid. Staff stated that the hoods had just been serviced and the fluid accumulation was degreaser and hood grease. Discussed repairing hoods to avoid possible chemical contamination without going food.
