In refrigerator, observed house prepared ranch dressing (containing buttermilk) at 49F and stored in a covered plastic container over 12 inches deep. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. The dressing was within 4 hours of being prepared, and it was transferred to shallow containers to facilitate cooling. Corrective Action: Corrected at time of inspection.

Observed multiple foods in the prep table tops all held at 46-48°F (See embargo form). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held over 4 hours were discarded by PIC at time of inspection. Foods cold held under four hours were moved to an alternate cold-holding unit to rapidly cool. Additionally, PIC will be drafting a Time-as-a-Control plan to ensure out-of-temperature food is not held longer than 4 hours in the future.
