Observed Chinese chicken chow mein salad in reach in cold holding unit with an internal temperature of 49*F. Person in charge (PIC) stated salads have been in unit since the morning. PIC voluntarily discarded salads. Discussed with PIC that time / temperature control for safety (TCS) foods must cold hold at 41*F and below. Correct By: Corrected At Time Of Inspection
